Brunelleschi Hotel Firenze Remains of a Roman calidarium, a Byzantine tower, medieval and Renaissance buildings (perhaps belonging to Brunelleschi himself). A set of spaces that with the latest renovation have been enhanced by combining them with contemporary materials allowing guests to clearly distinguish what is ancient from what has been added to make their stay more functional and appropriate to the expectations of a contemporary guest. Everything midway between the Duomo and Palazzo Vecchio - it couldn’t be more central than this. Yet it is secluded, in the center of a block that protects it from the continuous flow of tourist groups. The Byzantine tower, the characterizing architecture of the hotel, houses the Tower Bar, the Osteria Pagliazza, where cuisine with local ingredients is served and, on the first floor, the two-star Santa Elisabetta restaurant. The contrast between ancient and modern has been emphasized by the exposed stone combined with glass and steel. The furniture is in an eclectic style inspired by the Italian 19th century. Each room is different, unique we could say, and among them all stand out the Pool Suite (with a terrace with jacuzzi and a fantastic view of the Duomo), the Pagliazza Suite (inside the tower, with circular walls) and the Duomo Suite, so named for its amazing view. Both restaurants are under the guidance of chef Rocco De Santis, who pours his international experience into the two proposals. In reality, even in the Osteria chef De Santis rethinks the ingredients of the territory, composing them in original and innovative creations such as Ravioli stuffed with wild Boar / Mushrooms / roasted Tomatoes sauce / black Olives or Wellington Beetroot / Mushrooms / green Apple / Vegetable sauce. Then with the desserts, he takes us back to better-known paths such as the White eating Almond and Bergamot. d e s i gn 148
