He oversees the kitchen of the Quercus restaurant, where local tradition is reimagined with a focus on quality and the origin of ingredients—many sourced directly from the estate’s own farms or from carefully selected small producers. Alongside him is chef Mauricio Teixeira, who shares and expresses the same culinary philosophy. More informal yet equally genuine is the Tree Cocktail Bar Bistrot, an all-day dining space designed for a relaxed and convivial experience, where each dish maintains the true essence of the place. At the heart of the project is a strong and consistent family vision: that of the Guffanti-Pezzoli family, who acquired the estate in 2007 and transformed it into an outstanding Natural Relais.
